How to make sushi at home using a hangiri

An essential tool for preparing rice suitable for sushi is a hangiri. It is a wooden bowl or tub, traditionally made from cypress and used to prepare sushi rice. After cooking, the rice is seasoned with sushi vinegar and spread on the hangiri to cool.

The bowl is tied by two copper bands. The unique shape makes it easy for the rice to cool quickly. Since they are expensive, the professional type used by sushi chefs could cost a few hundred dollars, some people just use a plastic container, but this will not produce the same effect as the cypress absorbs the moisture from the rice. A slightly larger 15.3 inch (39 cm) will hold about 10 cups of cooked rice. A hangiri used by a sushi chef in a restaurant could be a tub up to 1 meter wide.

Used with the hangiri, it is a wooden paddle called a shamoji. This helps prepare and season the rice, after which it is covered with a cloth called a fukin to cool it down. Traditionally, a shamoji, which is made of wood, bamboo, or lacquer, is frequently dipped in water to prevent the rice from sticking. According to legend, a monk devised this utensil. It can also be used to mash vegetables like garlic or cucumber. Modern sushi kits often include a shamoji made of plastic. Metal is never used, as this could split the rice grains. In traditional Japanese culture, the shamoji is considered to symbolize the unity between mother and wife. It is passed from one generation to the next.
